Welsh Lamb Stew
Cooking Time 3 hours approx.
Ingredients
1lb (450g) of Welsh Lamb
4 Carrots
1 Onion
2 Leeks
5 New Potatoes
1 Turnip
50g Pearl Barley
Thyme
2 pints of stock
1 tbsp of Flour
1 tbsp of Oil
Method:
Coat the lamb in the flour. Heat the oil in a large pan and cook
the lamb until browned.
Add the sliced vegetables, pearl barley, thyme and stock.
Cover and cook for 3 hours, stirring occasionally.
Serves 4
